Psicose
D-Psicose is a monosaccharide with a
chemical structure similar to glucose, but the position of the hydroxyl group
in the molecule is changed. Aloxone sugars differ physically and chemically
from other sugars. Aloxone sugar is usually converted from natural raw materials,
such as wheat, corn, etc. It can be used as an alternative sugar in food
products to provide sweetness without increasing calories or having a
significant effect on blood sugar.
Matching allulose and psicose documentation
Both names are used for allulose, but matching names do not establish identical stereochemical form, assay or physical form. Retain those identity fields when comparing the actual materials.
Equal sweetness versus equal solids
Changing ingredient mass to reach a sweetness target also changes solids and formulation water. Equal-mass replacement need not preserve taste. Set the comparison basis before assessing taste, structure and processing.
Powder condition and heated-sample observations
For powder, inspect closure, moisture exposure and caking. For processed samples, retain formulation and thermal history, then observe colour and crystals in storage. These are different evaluations.
